Meet your crew: Eros & Emily Williams


Euros was born and raised in the spectacular mountains of North Wales.  He started sailing extensively in his teens around Wales, later delivering and racing boats between South England, the Channel Islands and France. There he was a marine technician, while completing many ocean crossings.

Emily was born on the lovely Island of Jersey, situated in the Channel Islands between England and France. Since 2005 she has been a sous chef aboard a luxury charter catamaran and has studied with an Australian chef, specializing in oriental and Thai cuisine. Emily’s menu touches on flavours from around the world. Emily holds a RYA Day Skipper Certificate, advanced first aid certificate and she is also a PADI Rescue Diver.

Eggs benedict over smoked salmon 
Lemon ricotta pancakes

Shrimp and asparagus quiche with a garden salad
Spicy chicken and hazelnut enchiladas
Mango, spinach salad w/gorgonzola

Thai peppered prawns
Crab cakes with mango salsa
Chili coated wings with cilantro dip

Sirloin of beef in a rosemary crust with a Creole mustard sauce
Salmon infused with ginger and lime served with a chili corn cake
Almond nut crusted mahi mahi with a mango butter

Chocolate brownies and ice cream
Kalhua crème brulee
Passion fruit souffled crepes
Fruit Chocolate fondue  

Weekly Charter Rates include all meals and snacks, all hard and soft beverages and all water sports on the boat except for $100 per person for 5 dives per week, gear rental at $125 per person.
