Meet your Crew: Ian Phillips & Polly Pairman


Ian started sailing at the age of 14 and soon became a dinghy instructor on the south coast of England. His yachting experience has also taken him to Australia and the Mediterranean. He is an RYA Yachtmaster. Ian enjoys sharing the beauty of the Caribbean both above and below water. In his spare time he enjoys landscape photography.

Polly first found her love for sailing in her teens by taking a number of trips around the Greek Islands. Following this she became involved with the local sailing club. She honed her culinary skills by training with a UK Masterchef, that took place in Sydney harbour, specifically designed for a career as a Yacht Chef. She produces beautifully presented delicious food, with light or devilish desserts her specialty.

Polly's suggested menu:

Scrambled eggs w/smoked salmon
Fluffy lobster omelets
Eggs benedict w/passion fruit

Caribbean chicken roti
Slices duck breast w/wonton roll ups
Shrimp & mango skewers
Salmon cakes w/avocado salsa

New Zealand mussels in tequila sauce
Spicy chicken wings & pineapple
Salmon & cucumber rice rolls

Tarragon pears w/parma ham
Shrimp & potato fritters/lime mustard
Watercress & cheese tartlets

Roast loin of pork w/goat cheese
Char grilled tuna w/ricotta cakes
Leg of Lamb w/mustard & rosemary

Baileys cheesecake

Profiteroles w/chocolate sauce

Weekly charter rates
Include Captain, Chef/Mate, all meals and snacks, all beverages, open bar, and most water sports on the boat. Scuba diving is $100 per person per week including 1 dive per day.
